Sliders with Chipotle Mayonnaise

Ingredients
  • Chipotle Mayonnaise:
  • 1 cup mayonnaise
  • 2 chipotles in adobo sauce
  • 1 tablespoon adobo sauce
  • 1/2 lime, juice
  • Salt and freshly ground black pepper
  • Sliders:
  • 1 to 1 1/2 pounds ground chuck, 80/20
  • Salt and freshly ground black pepper
  • Cheese slices, your choice
  • Mini burger buns
  • Burger Bar (if desired):
  • Chipotle Mayonnaise
  • Pickles
  • Red onion slices
  • Chipotle Mayonnaise:
Directions
Chipotle Mayonnaise:

Add all the ingredients to a food processor and puree. Season, to taste, with salt and pepper.

Sliders:

Preheat grill over medium-high heat.

Form the meat into 2 to 3-ounce portions, packed tightly. Season with salt and pepper.

Place the sliders on the grill. Wait until they are nice and crusty on the first side, about 4 to 5 minutes and then flip and cook another 4 minutes. When the sliders are about done, top with desired cheese and close the grill, allowing the cheese to melt.

Place the slider on mini burger buns and top with chipotle mayonnaise and any other desired toppings.

Excellent recipe and I would give 10 stars if I could.  So tonight I got the genius idea to make some grilled fish tacos for dinner with lime cilantro slaw, chipotle mayo and avocodo.  I found this recipe earlier on today and decided to make it.  It is just so easy and wonderfully delicious.  I cut the recipe in half but the results were still fantastic. The only change I made was using low fat mayo instead of regular, and I didn't have the canned chipotles in adobo sauce, but did have chipotle powder. I substituted 1 teaspoon of chipotle powder for each chipotle in adobo sauce and followed the rest of the recipe exactly as is. I have to agree with others that I didn't make the sliders but I made the mayo. It's SO good and is rather mild, for those afraid to try it. I've made this a lot (I mean... a LOT and I like just a bit more kick. I now make it with 3/4 c. mayo and it's perfect for us. It's a nice smoky flavor with giving us the exact oomph we need. Excellent recipe! I also used the mayo over halved shrimp; cook shrimp w/garlic and butter. Center shrimp in pan after cooked, top with shredded cheese and about one tablespoon of coke, beer, water, wine or juice. Cover and let the steam melt the cheese. Made these for my bunco group. The mayo was the star; everyone was using on the sliders, as a veggie dip, and a chip dip. My only advice would be on finding the chipolte peppers at the grocery store. I found them in the "ethnic" aisle. I went to about 5 stores in town trying to find them - don't look in the pickle/olive aisle!!!! These are the most delicious sliders, but the chipotle mayonnaise really makes these burgers AWESOME!! I added caramelized onions, pickles and sharp cheddar cheese to my sliders. Made the recipe exactly as written. the only thing I did differently was I made carmalized onions to top the burgers with and wow there are so many awesome flavors going on with these little burgers. The remind me of the mini gourmet burgers that are served at a local resturant around here except these are VERY inexpensive to make and theirs are 9 bucks for two! If I could give a million stars I would! I have made these 20+ time since finding the recipe a few months ago. My family, friends and kids request these for every meal! I have had to convience them that other things I used to make are still good, lol... Really though these are a once a week meal at my house. I make the mayo as directed to a T, I add a little garlic and onion powder to the pattys before grilling but simply served with chedder and lettuce these are the best burger I have ever made. I made this sauce and put it on regular sized burgers instead of sliders (couldn't find slider buns) for my husband for father's day and hey absolutely loved it. I also added some grilled Vidalia onions, grilled mushrooms, pepperjack cheese and some crispy fried cheddar cheese (in a nonstick pan, throw a slice of cheddar on a very very hot pan with crushed ice and put a lid on it - cook for a couple of minutes until the cheese has many fine bubbles in it). Absolutely loved these burgers, and the mayo is unbelievable! My husband is willing to try new things, but is very traditional foodwise, really liked these. The chipotle mayo was good but it seemed to lack a little something, maybe a little sweetness. Also, I found the finished product to be a little too spicy hot and had to add a little extra regular mayo to tone it down. I did not make the sliders as I am allergic to beef (really) but when I saw the mayonnaise I thought this is something I need to try. I did make my own chipotles in sauce as I am salt restricted (not difficult to do). Then I tried the mayonnaise and instantly fell in love. I know this is something I will always have in my fridge. Already I have tried it on: baked sweet potato fries, baked tofu sticks (like tofu french fries)as a dip, and sandwiches. Next, i will try it for a glaze on some tilapia fillets I have. I also plan to try the BLT's with the mayonniase. I am looking forward to fidning how many ways I can use this treat. As I am on a fat restricted diet, I did use low fat mayonnaise. In order to further reduce the fat, I plan on trying to cut the amount of mayonnaise by substituting fat free greek yogurt for half the mayonnaise ( I spend a lot of time adapting recipes to fit my restrictions). I am going to make a large batch of chipotle sauce to freeze so I can make this mayonnise whenever I want. When you have diet restrictions, it is so wonderful to find something that will boost the interest in the foods you can eat. One thing I thought was interesting is how much something like a sandwich mellows the heat from the sauce so if you are concerned about this making items too spicey, do not be worried. Chipotles are becoming the new bacon for me. You can add em to anything and it makes it good. The chipotle mayo is the best part of the recipe. If you are looking for a slider recipe, go no further! These are the best. I have made these for several parties, and they disappear faster than a 100m sprinter at the Summer Olympics. Be sure to use ground chuck, its juicier, dill pickles, and don't leave out the Chipolte Mayonnaise, it makes the recipe. This was a very simple recipe that was a huge hit with my fiance. I used cheddar and provolone on the burgers and the only thing I think could have been better was the actual burger. I used the salt and pepper in the recipe and also added some garlic. Maybe a different type of beef would have helped. The mayo is fantastic, the lime really sets it off. Definitely use a fattier content meat. We used 85/15 and these little burgers came out so moist. I also recommend Hawaiin King brand dinner rolls to use as buns, either the sweet or new savory butter kind. The buns help make this recipe a success. You can also lightly grill the buns on the top rack. Try looking for the chipotle chiles in the International foods aisle or Hispanic foods aisle at the grocery store. It took me by surprise because they are actually in a small can. I guess I was looking for something jarred at first. You can pull out a couple of chiles and then use 1-2 tablespoons of the sauce, depending on how "hot" you like it. :) We like it hot, and added more sauce. We finally found a good use for the "Bullet" too. I haven't tried it yet, but it might make a good sauce for a reuben-type hot sandwich. Amanda - you may want to make this mayo even easier. Last summer I bought Target's brand of chipotle chili light mayo in a small squeeze bottle. It's still in my fridge, expired of course, but it was pretty good! Need to clean out my fridge. This may be an easier option. Amanda, I live in Fairfax so I'm not familiar with stores in your area. However, I used to have the same sort of problem you're facing until I located a Latin market. These stores regularly carry chipotles in adobo. I did a Google search on your area and came up with one, El Sol Mini Market. I hope they can bail you out. Leave it to Bobby Flay! I tried these yesterday on my teenage son and his buddy and they loved them!
