I made this recipe for my family and they loved the wings. I couldn't find cascabel chile,tamarind concentrate or pimento wood chips so I substituted chipotle chile, worchestershire and apple wood chips, respectively. The wings ere delicious and the sauce more them perfect. I will definitely make this again!

Couldn't find the cascabel chile so I ended up using store bought jerk chicken spice. Bad choice!! Next time I'll make my own rub and substitute w/chili powder. The tamarind glaze did save the day.

eh, they were okay. i really liked the technique of grilling the wings, because it produced an incredibly moist piece of meat. but as far this recipe goes, it wasn't really anything special. the flavor was decent, but there was no heat, no kick. i may try this again, but tweak the dry rub or sauce bit to add some spice.
i do agree with "backyard BBQ," the tamarind sauce was quite tasty...and definitely use a saucier!

As a BBQ appetizer these wings get a 4. I used apple and cherry wood for flavor, and cayenne with chipotle powder for chile.
This recipe is replacing my grilled marinated boneless chicken breasts as a BBQ appetizer. The sauce is awesome, and I am a sauce on the side guy. The tamarind is the perfect call here and it goes great with front and back heat.
Tip: this sauce reduces so fast and well in a saucier pot.
