Ingredients

  • 1/4 cup red wine vinegar
  • 1 tablespoon honey
  • 1 pinch saffron threads
  • 1 cup good quality mayonnaise
  • 1 tablespoon minced garlic
  • Salt and freshly ground pepper
  • 2 pounds new potatoes
  • 1 large tomato, coarsely chopped
  • 1/2 cup finely diced Spanish onion
  • 1 tablespoon finely chopped fresh thyme
  • 1/4 cup coarsely chopped flatleaf parsley

Directions

Combine the vinegar, honey and saffron in a small pot. Bring to a boil over high heat; immediately remove from the heat and let sit until cool to room temperature. Combine the mayonnaise and garlic with the saffron mixture in a medium mixing bowl and season to taste with salt and pepper.

Cook the potatoes in a large pot of boiling, salted water until tender. Drain and slice 1/2-inch thick. Place in a large serving bowl and immediately fold in the mayonnaise mixture, tomatoes, onion, thyme and parsley. Season to taste with salt and pepper.

    I really like this recipe. I use it all the time but I do modify it. I do not use the saffron or the tomatoes. I include peas (cook a cup or so of frozen and throw them in at the end and red onion (chopped and the herbs I will use fresh or dried if I don't have fresh handy. Either way this recipe is always a hit and its really simple to make.

    The taste is unique. I love the balance between the ingredients - each one brings a surprise flavor. I have made it many time and get lots of compliments. It is not your standard potato salad and I crave it sometimes. Thanks, Bobby

    i made this for dinner last night, and received a great review from my dad: "that was the best potato salad i've ever had!" in fact when i woke up this morning (late! i went straight to the fridge to eat the leftovers, but dad had beat me to it.

    i added two hard boiled eggs to the mix and a pinch of paprika; i didn't even have fresh thyme or parsley so i had to do without.

    i am definitely going to add this to my recipe box.
