Ingredients
- 1/4 cup red wine vinegar
- 1 tablespoon honey
- 1 pinch saffron threads
- 1 cup good-quality mayonnaise
- 2 tablespoons minced garlic
- Salt and freshly ground pepper, to taste
- 2 pounds new potatoes
- 1 large tomato, coarsely chopped
- 1/2 cup finely diced Spanish onion
- 1 tablespoon finely chopped fresh thyme
- 1/4 cup coarsely chopped flat-leaf parsley
Directions
Combine vinegar, honey and saffron in a small pot. Bring to a boil over high heat; immediately remove from the heat and let sit until cooled to room temperature. Combine mayonnaise and garlic with saffron mixture in medium mixing bowl and season to taste with salt and pepper. Cook potatoes in large pot of boiling, salted water until tender. Drain and slice into 1/2-inch thick rounds. Place in large serving bowl and immediately fold in mayonnaise mixture, tomatoes, onion, thyme and parsley. Season to taste with salt and pepper.

Funny how two people can be on such opposite poles, isn't it? I found this one to be Potato Salad Nirvana. It's a sophisticated and complex dish. If you try it warm it's like eating comfort with juicey little bits of sweet tang, balanced w/ familiar onion, while the saffron perfumes the whole thing. Brings you right to spain. This ps is one of my all time favorite things to eat on the whole planet!

I love all these spices which is what attracted me to this recipe. VERY disappointed!!!I did everything exactly as instructed and used a very high quality safron as well. Tried it cold, hot, room temp, and the taste is just "off." I ended up throwing it out, which I have done maybe 3 other times in over 30 years of cooking.
