    so good. I only put 1 jalapeno in the marinade. should have put two. didn't make enough onions. Want to try the salsa.

    This is absolutely delish! I would have never thought to put eggplant in my quesadilla and it worked out perfectly. I look forward to making this again and perhaps adding shrimp to the mix!

    WOW! We wanted to try one of Bobby's Mexican food recipes and BOY am I glad I chose this one!! We were sssooo surprised at just how good it was! We chose not to add the eggplant, and it was still delicious! LOTS of flavors & textures all combined for a delightful surprise! Thank you Bobby!!

    I make these quesadillas often and they are a hit with every group of people i serve them to. I sometimes substitute the eggplant for bell peppers. The receipe is definitely a keeper. thanks Bobby!!

    I have had very little experience with Mexican food of any kind, and these make me want to move there. I made it exactly as directed and it turned out beautifully. My husband has asked me to put them on the "master list" of recipes. They were a bit of work to prep and combine, but nothing was too complicated. Do not skip the final sprinkle of chili powder.

    I made this quesadilla tonight for my boyfriend. He went back for thirds and licked his plate! The chicken comes out really flavorful and incredibly moist!
