    I've been making this forever...I have my own little twist though....

    I'm not a big eggplant person, so I went with grilled bell peppers. I also use a grill pan to heat the quesadillas.

    I don't think there are words to express how good this is!!!!!!

    MMMMMMMMMMMMMMMMMMMMM!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

    This was a wonderful dinner to make for my husband because #1 it's easy for someone who is trying to be more creative and #2 the chicken has a wonderful marinated flavor! Try it!

    This is an excellent dish. It could be an appetizer for many or a main dish for a few. I would definitely recommend making this dish.
