If you want a gourmet meal in minutes, this is the recipe for you.The combination of flavors is delicious and the ease of preparation unbelieveable. Cooking the squid for just 2 or 3 minutes, how easy is that, and it was so tender. It's great over pasta. To my surprise, the next day, it was just as good cold. This recipe stands on its own. Fabulous!!!!

Not only was this dish easy and FUN to make - it was also delicious. Since it is a bit of a hearty meal, due to the bacon, I put it on top of lettuce. To kick it up a bit, Bobby Flay style, I also added a habanero. I taped myself while doing this variation for my blog - and I also show you how to clean the squid as well.

    Enjoy!

Had friends over for a Tapas Dinner Party where I served up several different Tapas. This one was a huge hit I could hardly plate it! People who didn't like squid enjoyed this Tapa, people liked squid raved about it. Seriously, it smells as good as it tastes. A great dish.

We used to batter and deep-fry the squid in oil. Now, I make this and everyone thinks it is a gourme dish. I don't add the thyme.

This was so good that I actually made it as a dinner meal, over a bed of whole wheat pasta! My husband can't wait for me to make it again!

Since I didn't have any fresh thyme (out of season I made this without it. It was great. The bacon and garlic combine to impart an impressive flavor, but not overpowering, on the squid. Really, really good.

Great way for squid vs usual breaded. Ymmmm. NOTE-if fresh squid is not available try to locate squid from Monterey Bay, CA as they have the best fresh and frozen as it's shipped out from the cannery there. Other brands are just plain fishy tasty.

The taste of the squid was dimished with the thyme. I think I will try basil the next time instead.
