My mom grew up in Oklahoma. Her potato salad was also very eggy and mustardy. I made this recipe exactly as written. It was delicious, although not my mom's potato salad. I took it to a family potluck which included my sister and my (now 80 year old mother. Both ate mounds of this salad and loved it. I recommend it highly. I don't think I would suggest any changes.

Fantastic!! I made it exactly the way Bobby did on the show. It was helpful to see him do it. I made up a jar of the pickled red onions to use with other things. Also, I made a couple of other recipes from this show - all of them great!

Huge hit at my house! Don't be expecting your usual creamy comforting potato salad that screams summer picnic. This is a bold, in your face flavor snapping potato dish. Delicious with grilled chicken.

Best potato salad I ever tasted. Will replace generations old family recipe. I used fresh packaged chopped red onions from store instead of slicing them...saved time and was delicious!

This was fabulous potato salad! I happened upon it while looking for a recipe for pickled onions and it piqued my curiousity. So glad I tried it! Don't mess with it - the recipe works perfectly. We had it freshly made, room temp, with filet mignon, corn on the cob and sauteed summer squash. My hubby says I'm spoiling him. :

This review is actually for the pickled red onions; I actually haven't tried the potato salad, sorry! The pickled onions are great though--I didn't realize they're so easy to make! I've served these with Food Network's slow cooker pork tacos and on fish tacos. Also, my family doesn't usually have red wine vinegar on hand since we use a lot of rice vinegar and apple cidar vinegar in our Filipino food, so I actually use half and half. I'm sure it would be good with the red wine vinegar too, if we had it.

WOW!!!! This is super yummy. It took me a while to make it but it was sooooooo worth it!!!!! It doesnt really have that many ingredients but it's YUMMY!!!!
Watch the video. IT helped me. I did use some of the pickaling liquid from the onions and it gives it that twang. Next time I go to a BBQ I will surely bring this because I got so many good compliments on it :

This potato salad is absolutely delicious -- and I don't usually like potato salad. The pickled red onions add so much!

Made this with ham for Easter dinner and it was so good. Didn't need to make a honey mustard sauce for the ham since this dish had mustard in it already.
