This potato salad is absolutely delicious -- and I don't usually like potato salad. The pickled red onions add so much!

Made this with ham for Easter dinner and it was so good. Didn't need to make a honey mustard sauce for the ham since this dish had mustard in it already.

Awesome. I roasted the potatoes with some garlic instead of boiling them for some added flavor. Best potato salad ever!

I second that "Fantastic Recipe". I really loved the pickled red onions and roasted red pepper flavors in the salad. I think it just brought the whole salad alive with flavor. I generally add mustard and mayo with a little bit of diced jalapeno to bring it all to life but this recipe just knocked it out of the ball park. It was absolutely great with Crab Cakes!

Fantastic recipe! I made this for the first time and took it to a party for a football game (Saints and it was a smash hit. The hosts of the party loved it so much they texted me after the party asking me to please keep the recipe because the potato salad rocks! My wife rates it a 10. Thanks Bobby!

I've made this recipe countless times since seeing the episode. Everyone who has tried it has loved it. Like one of the other reviewers, I also use just the pickled onion recipe from time to time too.

I've never made potato salad before, so I was a little reluctant. I made this for our labor day texas style BBQ & boy was it a hit. All of our guests loved it, even the ones that don't particularly care for potato salad. I followed the recipe to the tee & the way the dish tasted when I first mixed it was so good. The pickled onions were fabulous & the most defining ingredient part. So glad I found this recipe. It has become a favorite in our house. No more store bought potato salad for us!!

Served this with a bevy of Bobby's "Texas style" items. Everyone loved every item - the combination of flavors was amazing. Please don't skimp on the time to make the onions and roast the pepper - these components are what makes the difference. And as far as the onions go, tasting them on their own you may not like them - it is when you add them to the salad or a brisket sandwich that they bring their gifts to the table.
