Made this for July 4th and making it again for my son's potluck at school on Monday. Last time I made it people raved! Between the pickled onions and the roasted peppers, this dish has flavor that just won't quit!! Loved it!!

Mighty tasty! My usual potato salad uses cumin and fennel; however, these pickled red onions are super. I plan to serve this potato salad at our party on Saturday along with smoked pork ribs, brisket, and the other goodies our friends bring.

Just made the Pickled Red Onions and they are great. Wife thinks that they need a bit more sugar. We had them on Sloppy Joes.

Forget all the other stuff I use this just for the Pickled Red Onions. I keep a jar in the refrigerator for toppings. Burgers, Hot dogs, salads, you pick it they are great.

Loved the pickled onions and roasted red peppers in this potato salad. I made it last week for friends on burger night and it was a huge hit! By far the best potato salad I have ever had. Plus the pickled onions made their way to many other dishes, thanks!

I just made this last week and I will have to say... I just found my new favorite potato recipe to make for parties and bbq's... I loved it! The grilled onions are a must and a great topper on almost anything... yumm!!! Thanks Bobby!

This was a great recipe. The combination of the flavors made the potatoes come alive. I never knew that adding the flavor while the potatoes were still warm would soak the flavor throughout the potatoes. I'm definitely making this again.

This potato salad was perfect. The flavors work so well together and everyone is right that the pickeled onions make it. My mother in law hates potato sald and she couldnt get enough of it.

This was an absolutely delicious recipe! I will not go back to the old way of making potato salad. I especially loved the pickled onions and I will not change anything.
