    The meat didn't have a lot of flavor oddly enough. I marinated it in Mojo first and then followed the recipe. I did make the pickles, and they were perfect with the sandwich. I didn't care for them alone, but my family loved them. The combination of everything as a sandwich, however, was fantastic. Oh, I didn't make the sauce, I just used mayo and whole grain Dijon mustard.

    Tasty sandwich, but not a Cuban. Pulled pork, roasted garlic mayo, mustard? Not the norm here in the Cuban areas of Florida (Ybor City in Tampa or Little Havana in Miami. Nice try, but no (Cuban cigar, Mr. Flay.

    This sandwich surpassed my expectations, which were high to begin with. I was skeptical about braising the pork instead of roasting, but the meat came out tender and intensely flavorful. Do not skip the browning step, as this imparts alot of taste. I substituted garlic powder for cumin, which I think worked out well.
    I don't know if it is necessary to use homemade pickles, but I did, using home grown cucumbers. Very satisfying. Pickles were sweeter than kosher dills but again, packed with flavor.
    We were able to find authentic Cuban bread loaves, but they were hard to find. We considered substituting another kind of bread but I don't think there is a good sub for the Cuban.
    Even if you don't make the sandwich, try the pork just to serve a main dish. I do a lot of smoked pork shoulder and Bobby Flay's recipe beats my best effort. Definitely try this recipe. Time consuming but well worth it.

    Looooved it! My boyfriend and I made this along with Guy's beer battered onion rings and all was perfect! We didn't make the pickles, just bought and thinly sliced them and the mayo sauce was great. I am gonna use that on everything!
