I really liked these burgers, I think the cheese sauce would have been a lot better with a white cheddar cheese instead of monterey jack though.

The green chile relish is absolutely delicious. I wasn't sure about the vinegar, but it was awesome. Wouldn't change a thing. We ate the leftover bit on chips; it makes a great salsa too. : I don't eat red onions, but my husband loved the pickled red onions. We just used Monterey jack cheese, which was yummy. Great recipe. Thanks Bobby :

My husband and I made these burgers last night for some friends we invited over for dinner. They were the best burgers EVER! They were just the right amount of heat and flavor that made you want more and more! Bobby Flay never lets you down, he's the best chef EVER!!

I was hoping to use the recipe from Bobby's competition (no offense Bobby Flay but seeing how Bobby's was the only one listed, I used the relish part only. First I used turkey for my burgers. A little healthier, however drier. I figured the relish would help with mositure. 2nd, I used only 2 pablano peppers instead of the serrano and the other, hotter one. I was first skeptical since I'm not a big vinegar fan but once you add in everything it tasted great. The cilantro definitely added to the relish so don't skimp on it. The healthy version was good, I bet the full up version with the cheese sauce is outstanding.
