Very simple recipe. Toasting the couscous is very important and be sure to stir a couple times after adding the liquid. I find pearl couscous sticks much more than the regular. I did not care for the amount of balsamic in the vinaigrette. Next time I would balance it out more and use only a tablespoon of balsamic and 2 tablespoons of red wine vinegar.

It was very good. Light and tasty. Needs grilled onion I think, that is the only thing missing for me. Next time I will add a grilled red onion to the salad.

Used the lemon vinaigrette on israeli cous cous mix (pearl cous cous, baby garbanzos, quinoa and i think wheat berries from Trader Joe's and added some grilled corn kernals, yum! Could not believe how good it tasted. Family & coworkers alike loved it. Will make the grilled veggies with Trader Joe mix in the future.

My family enjoyed this dish quite a bit... I do prefer the pearl couscous...we just prefer that texture more. Nice flavor and grilling the veggies makes them delicious!

Excellent salad for summer veggies! And the dressing is now my go-to dressing. No more bottled supermarket dressings for me. A good balsamic and fresh lemon juice are the key to really make this dressing sing.

Followed the recipe completely - loved it. We ate it as a main entree (no leftovers between the 2 of us! - next time we'll add some tofu to it for protein. Great flavors, and easy to make.

This is an incredible recipe! So tasty! Israeli couscous can be hard to find and expensive depending on the store. I found it at Trader Joe's and it was only a few dollars. The recipe is also fantastic with orzo.
