This is delicious because it has more animal fat in it than 2 pounds of filet mignon! I have a real problem with recipes claiming to be vegetarian then adding sour cream, heavy cream, and butter to it. The reason for being a vegetarian is to eliminate animal fats from your diet, not disguise them so you feel like you're eating healthy.

After reading other reviews, I doubled the number of potatoes but used the same amount of cream, etc. for my large family. I also reheated them in orange shell halves (and used the orange segments in a fruit salad. This is a great side dish.

We enjoyed this. I halved the recipe because it was just my husband and I who were eating tonight. I also used half and half and light butter to help reduce the fat content. There was still twice as much cream mixture as needed. Otherwise it was very good. Not sure i could really taste the chipotle. I used real maple syrup.

I warmed all of the ingredients in a sauce pan just before the potatoes came out of the oven... the potatoes were good so good.
But the best part was that I had leftover chipoltle cream sauce which I used over top of the baked chicken breasts and that was WONDERFUL! From now on I'm keeping this recipe not only for the potatoes but for the sauce to go on other things!! YUM!

"I hate sweet potatoes"...oh no..."I don't eat sweet potatoes"...stop those comments for life! The hit of every 49ers Tailgate, Thanksgiving, Christmas, Wednesday night dinner. Agreed though...skip the "twice baked" idea.....just mashed potatoes it is for our gang. You'll never want your sweet potatoes any other way, EVER again. How sweet (and hot it is. Recipe is requested every single time this is served. Thanks Bobby.

These were awesome. Not too spicy, just a nice smokey flavor. Be advised, dont use all the creme mixture. It can easily become too loose and watery.

The recipe sounded too sweet, with all that syrup, but turned out really great. I will make this one again soon. I substituted cayenne pepper and left out the creme fraiche, using kosher heavy cream. Really delish, just the right spices.

the potatos were great! i cooked and served them in orange halves instead of the skins and everyone loved them. my wife hates sweet potatos and she said that i need to make them again this year and not change a thing

I am almost sick of making it!!! Everyone just LOVES this recipe. I add a little more creme fraiche and just use half of the butter (it is very hard for me to use a stick of butter for ONE side dish and up the chipotle pepper puree to 3 tbsp. The end result is still just as good and a little more smokey than the original (which I followed to a 'T' the first time. I get requests to bring this to any potluck we go to, which is great, but I want to make other things too!!!!!

Do yourself a favor, don't try to skin a cooked sweet potato. This recipe makes wonderful mashed sweet potatoes with a spicy kick!
