    I can't even describe how good these potatoes are! My only caveat is to make sure, if you're going to follow the recipe by the book, to use huge potatoes. Otherwise you need to adjust down measurements. One you try this recipe you'll never make sweet potatoes any other way again!!!

    The combination of chipotle peppers and the cream fraiche was something I would never have considered to put together but it was a marvelous combination. I like the unexpected aspect of it and so did my husband.
    I agree that the entire cream fraiche amt as stated in the recipe makes it too runny but just increase the amount of potatoes or use less of the cream fraiche mixture. Makes me want to look for Bobby Flay's restaurant in NY next time I fly up...open one in Atlanta Bobby!!

    You will not believe how well the chili and chipotle work with the sweetness of this dish. It is a showstopper that will leave your guests begging for the recipe. Remember though, you don't have to use the whole creme fraiche chipotle mixture or it can get quite runny...still an unbelievable flavor though.

    Awesome recipe. What a nice suprise! Different and tasty. I made this dish for Thanksgiving and put the filling in a casserole dish instead of the potatoe skin making it easier to serve.
