This is a fabulous recipe. Have made it over and over again. I always use ground turkey breast and I Carmelize the peppers and zucchini. Ever better the next day as a meatloaf sandwhich. Double the recipe...it's that good

Every time I have made this it has gotten rave reviews and I am always asked for the recipe! People are surprised by how healthy it is too!

This was soooo easy to make!! And it was delicious! Ive just stated trying to eat healthier and this is one of the fabulous recipes i came across! My husband who is not trying to eat better, LOVED it!! I am sharring the recipe with all my friends!

So tasty! I was looking for a healthy meatloaf and my neice told me about this. I was a little spectacle of this recipe but I gave it a whirl. I'm so glad I made it. It was delicious! I couldn't wait until the next night for leftovers! Even my husband liked it and he's not into the turky and veget healthy ideas. But I didn't tell him and he loved it. The other reviewers were right the balsmic glaze really was delicious. I Can't wait to make it again and I will try to add carrots and onions next time. More vegies wouldn't hurt.

WoW!! Best meatloaf I ever made! Fam aren't fans of meatloaf, but every once in a while l get that comfort-food craving, They all devoured this however, and fought over left-overs! I too roasted the veg in the oven, adding half of a small red onion, otherwise followed recipe. Served with faux mashed potatoes (cauliflower and baby peas. Will make again and again, Thanks Bobby!

This is really a delicious dish! I put it in a larger glass corning baking pan because I like all sides crispy. So, it took less time with more surface area exposed to the heat. This, some mashed potatoes and a veggie go well for my Weight Watchers meal planning.

Took some prep time. Glad I chopped the veggies ahead of time. I used all beef since that is what I had on hand. Very tasty. The sauce on top was great! I did not use a loaf pan. Instead, I used a bakers sheet and formed the meat into a sort-of-football shape. More of the meat got the crusty glaze. Thankfully I lined my pan with two sheets of foil b/c the sauce crusted the foil a bit. My husband hates meatloaf, but liked this one. : I will make again!

This recipe didn't do it for me. The flavors did not combine well together, the glaze was very good however. Will not make this again, too much effort for a not so great dish.

This was so good! Replaced the 2 peppers with 4 carrots. I did not have thyme so left it out, and had only dried parsley. Really good! You won't miss the beef! I put quartered yellow gold potatoes around it drizzled with olive oil, sea salt and oregano

The glaze was the best part. I liked the idea of the veggies in this, but they did not translate well and created too much moisture in this loaf and it was somewhat soggy. I would go back to mom's recipe with this glaze.
