    I made this for a Father's Day get-together since I know it's my dad's favorite. I made it with 8 potatoes which seemed like enough, but it was gone before I knew it! Everyone loved it! So yummy and tangy and different from the regular cold potato salad.

    I loved this recipe! However, once I sauteed my vegetables in the bacon fat, there wasn't any left for the sauce. I had to add some olive oil to the pan and was able to pick up some residual bacon flavor that way.

    I do a few things differently. First, I use red potatoes and don't see the need to peel them. Also, I add more sugar than called for in the recipe which gives the dressing a much more pleasing flavor (even though I'm a huge vinegar fan, the original recipe was a bit too sour. Taste as you go to see if you need more sugar/salt. I also add a bit of spicy brown mustard.

    Tip: This dressing is GREAT on German bratwurst! Bun, brat and this dressing...yum.

    Let me know when you find authentic!

    I haven't tried this yet, so can not attest to it.

    I lived a couple of Summers in Germany with a German family around 30 years ago when I was 17 and my German "mom" made the best German potato salad and green salad!

    I was only 17, but to naive then to ask for the recipe. Now at almost 46, I have not found anything close to the "real" thiing.

    Questions on peeling hot potatoes. Is their a way to make it easier ,like shocking them in ice water to make the skins come of easier?

    This was actually very easy to make and I really liked the added celery. I agree with the previous review, just a bit less vinegar would have been better because the potatoes don't have time to absorb it since you serve it warm. Otherwise, a delicious recipe just like my mom made and my children liked it too! Vielen Dank!

    I made this for dinner tonight and it was a big hit with my family, but a little on the sour side for my taste. Next time I will cut back on the vinegar and add a little more sugar. Also I used a half pound of bacon.

    After searching for a recipe that was even "kinda" close to the flavors I remember growing up with...this is the best!! Made it with more bacon, carmelized the onion and celery in a little of the fat,made more of the sauce because the potatoes like to soak it up, adjusted the sugar and cider vinegar to my liking, I like to taste the sweet with the sour, and adding a little at a time you can hit your mark. The addition of the flour really is key for the dressing. I'm really happy with the results and will not look for another recipe!!

    I made this salad yesterday and did not enjoy it at all. My great grandmother is german and would make an amazing potato salad. This was nowhere near as good. I'll keep searching for a true replica.
