After 1 hour at 375 I realized that 375 is not a "roasting temperature". Once I cranked it up to 400, they were roasted in about 25 minutes. 375 is a baking temperature, not a roasting one.

This is the most wonderful salad I or my family(including the in-laws ever tasted. Great textures and flavors, and unlike Bobby, not spicy hot that he normally makes. Thanks Bobby, I will be passing out this recipe.

I made a vegan version (no bacon, no goat cheese of this salad and it was still delicious! The savory warm lentils on top of a crisp, mustardy/vinegary greens was fabulous! To make it easier, I also used canned whole beets and just roasted them for a bit in the oven, superb!

This recipe was so yummy. If you like beets, goat cheese and lentils it's great. Who doesn't. I knew that I was going love this recipe so I couldn't wait to make it even though I didn't have any sherry vinegar. Well lets just say that I was going to make everything ahead and then make the dressing the next day well .... IT DIDN'T LAST THAT LONG TOO GOOD+ I live with too guys they loved it too.Thanks Bobby for the great recipe YOU ROCK!!!!

So unexpectedly good! Seemed like an odd combination, but I love beets and it was fantastic. I didn't even bother with the salad part of it, I just threw it all together, the cheese, beets, and vinegarette. Made it much more portable to take for lunch.

I love lentil, beet and goat cheese salad, and this recipe was pretty good. I was expecting it to be a little on the lighter, refreshing, summer-type salad. But, the bacon made it a bit heavy in flavor. Maybe better for the fall or winter months.

I'd always been afraid of beets until I saw Bobby making this dish. Sumptuous, easy and wonderful, this concotion of roasted beets, lentils, goat cheese and salad is magical in taste and texture. Plus, it's super healthy!

This salad was delicious. Light, yet filling with lots of bright flavor thanks to the vinegary salad dressing. The only reason I didn't give this recipe five stars is because it is actually more labor intensive than the final product would lead you to believe, rather than the more preferrable reverse situation.

This is a delicious and extremely healthy meal, and easy to make. It is wonderfully tasty even without the bacon.
