    did not like the cellulose spongey, heavy texture. Way too "eggy" tasting
    12 egg yolks too many. coconut cake should be light and white

    This is a very complicated cake to make, but worth the effort if you like the ingredients. It took about 4 hours of prep for this cake! I don't much care for it, but the neighbors couldn't stop raving about how good it was. The macerated berries make a huge difference so don't serve it without them. I put the cake in the fridge overnight to harden the frosting, which was a little runny.

    I see that alot of ppl had a problem with the ganache.

    try heating the cream alittle more, or add somemore gelatin.

    Ganache when whipped well and chilled will be thick. Just do not over whip as it gets colder it gets harder

    ganache is what is used to make trouffles! YUMMI

    I am a fairly experienced backer and the cake came together easily but the frosting failed completely. It stayed far too liquid to be able to spread. I have made numerous different frostings in the past and am sure I followed the directions to the letter, but the recipe just did not work. The cake is light and has a fairly strong coconut flavor. It might be worth trying the cake with a different frosting.
