This fish was horrible. The fish looked beautiful with the oranges and greens, but I think that red sauce ruined it.

Add a little orange juice, orange peel and 1/2 tbls of brown sugar to the sauce. Substitute salmon and add rub to the top of the salmon.

I made this tonight and it was very easy to make. I had to scale down the recipe for a 2 lb red snapper since it was just for 2 people. The sauce had way too much oil and I was expecting some kind of heat, but there was none. The snapper was very good without the sauce, but I think I'll play around with the sauce.
