We're not a huge fan of chorizo of any kind at our house, but the rest of the recipe sounded good. I substituted cubed portabello mushrooms for the meat, used only half the goat cheese (because I've noticed in other recipes it tends to be a bit strong, and added a bit of sage and rosemary.
It was a great hit with our family. I'll keep using our adjusted recipe for years to come.

I have been making this for years and it is always a hit. I swapped Spanish chorizo for Mexican though and use a cornbread base but the rest of the ingredient combo is great. I have also swapped out chorizo for soyrizo to accommodate vegetarians.

Has anyone made this without the bread? My mother is gluten free and was wondering if I could just skip the bread.

Among the best of any dressing ideas in an age of great cuisine. Takes some time, but is not difficult to prepare. Chorizo choice is importnat...find one you like well on its own, as chorizo has lots of flavor variations by brand.

This was just ok. Nothing like I was expecting. With so many wonderful flavors in the ingredients: wild rice, chorizo, goat cheese...I was expecting some bold and savory flavors from this dish, but it really ended up tasting quite plain to me. My DH and MIL said they liked it, but I thought it was disappointing.

Awesome wild rice dressing! I made it to accompany beef tenderloin and prime rib. It was perfect! Because the dressing packed a bigger punch than traditional dressing it really stood up to the beef! Everyone loved this dish and several people asked me for the recipe! I'll make this one again for sure!

I made this for Thanksgiving and everyone loved it! The blend of flavors in the herbs, chorizo and wild rice was absolutely awesome. I will never make traditional dressing again. Way to go Bobby!
