I saw this episode a short while back and tried these grits last night. They were really tasty! I used only 1 jalapeno and 1 teaspoon hot sauce, as I prefer things a little milder, and it had just the right amount of kick for my taste. Will make this again!

I made this recently for my Southern boy husband and he went crazy for it. It has just the right amount of kick to it - we ate it for dinner and again with breakfast the next morning and there was still 1/2 of the dish left!

The seeds do not create the heat in the jalapeno...its the veins! Get a can of mild flavored jalapeno which has no heat.

The texture was light and fluffy. It was a pale golden brown. I had gone slightly lighter on the tabasco and jalapenos (I used 2 T not 2 jalapenos and so the taste was light also. Next time, I will put a little more jalapeno in. I picked all the seeds out of the jalapenos that I used. Lovely - will use often!
