Made this today for Easter brunch and everyone loved it. It was fairly easy to make and I made it way ahead. We will be having this again.

Breakfast Casseroles can come in just about any form you dream up with breakfast foods. I can't say there is anything special about this one but it is quite tasty as casseroles go. Like other reviewers, no mushrooms for me. And since I'm single, I cut the recipe in half and used an 8x8 pan. 25 minutes was just right. I also didn't put it in the refrigerator for at least an hour before baking, as I didn't see the point. Easy and filling! And hey! There was no butter! Ha!

Yes, I agree with adding an additional 30 minutes to the cooking time for this casserole. Or just keep checking the casserole until it;s done then write the correct time on the recipe. All ovens are not the same also. I added everything from the recipe except the hot sauce, due to kid's not liking anything spicy. I have to tell you all, they loved it and so did both me and my husband. The reveiwers whose potatoes that were not soft, did you pre-cook them? If you read the recipe, it did say "cooked" and on the Deen show, Susan was cutting up precooked potatoes. I did sautee the mushrooms before adding, we just like them that way. I have recommended this recipe to many of my friends, they all found the cooking time needed adjusting also. But other than the cooking time, this recipe is marvelous. I highly recommend it. Keep up the good cooking. YUM!

This recipe was fairly easy to make. I did not add the mushrooms but followed everything else to the recipe. I baked 350 for 30 minutes and it wasnt even close to being set. I had to add an additional 20-30 minutes and crank the oven up to 400 to give it some extra cooking time. I think the cooking time needs to be modified. I don't think by not adding the mushrooms that the cooking time would be that different. Overall, once it was cooked it was very good.

After watching her make this on Paula Deen's show, I did everything she did except adding mushrooms & using a mild/medium sausage (I just used mild. The recipe states to bake @ 350 for 30 minutes......I had to add an additional 30 minutes because the 1/2 & 1/2 and egg mixture wasn't even close to being set (still had the consistency of when I poured it over everything. I also used my mandoline to slice the potatoes on the thinnest setting; the potatoes weren't as done as they could have been. Also, I would have used more than 2 cups of the different cheeses; I'd probably add an additional cup or 2.
