    I'm on the South Beach Diet and was looking for a way to have sweet potatoes other than the typical baking, mashing, or making into medallions. I saw Brian make these on his show and thought I could easily adapt them by using olive oil in place of bacon grease, turkey bacon in place of bacon, and eliminating the pancetta all-together. Lemme tell ya, this was a HIT at my house. It's an absolute perfect mixture of sweet and smoky w/ a little bit of spicy thrown in. We had it as a side dish w/ steaks. Phenomenal!!!

    I like watching Mr. Boitano's show and how easy he makes it look to make his dishes. He keeps them simple! Thanks Brian! Here's hoping you last a good long time!

    My family eats this as a side dish at least once a week. We forgo the bacon and "cups" and just make the sweet potato hash. It is SO good. We cannot get enough of it. Serve it as a side with anything... pork loin, hamburgers, steak...Thanks Brian!

    I made this for Christmas Eve, but used regular potatoes instead and it was amazing!!!! My whole family loved it! We used the leftover potato hash the next day (since I didn't have enough proscuitto cups made, and put it in crescent rolls and made little potato has bites out of them. I can't wait for more WWBBM? to get more great recipes!!!

    The recipe was easy enough to follow and the sweet potato hash is delicious, but my attempt at the bacon cups failed as the pancetta stuck to the muffin tin. I don't know if it was because I baked them longer than 12 minutes. The bacon cups were beautiful, nice and crisp, but I could not remove them in tact from the tins. The next time I will spray both tins with PAM before inserting the pancetta and the top tin.

    Loved Brian's show, let's have more of Brian on Food Network.

    My family & guests love these, and I'd like more recipes like this. Where's Brian?! Some of his recipes aren't my taste, but I've learned a lot about preparing food from him, and he makes it fun to learn. He's my favorite. Please get him back.

    These were a big hit with my husband and I. I think you could just make the hash minus the bacon cups for a really great side dish.

    This was very tasty...I used prosciutto instead because my grocer did not happen to have to other stuff. I also used a larger cupcake-sized pan. I did not have two of them so I just turned the one I had upside down and wrapped the prosciutto around each cup. It worked just as well. Very tasty!
