I recently tried this salad. Not only is it very tasty, but the colors in the dish make it a very pretty salad. Definitely one to make if you are looking for a unique salad to take to your next pot luck!

A group of friends and I recently made this salad -- and it looks as good as it tastes! Very light and fresh-tasting, with a good combination of crunchy ingredients and softer ingredients. We didn't have a grill, so broiled the corn in the oven, which worked OK, but we'd try some of the other methods next time. Once grilling season gets here, the corn would definitely be done on the grill. It looked really nice with a ceramic bowl, too -- different and yet tempting. One of my friends was looking for a unique salad to take to an event where lots of people are furnishing salads, and she chose this one. I'm sure it'll be a hit. Will definitely make one again.
And I love Brian's show! He really has some great recipes and he's fun to watch!

The only change I made was using extra virgin olive oil instead of canola oil. We had it with fish tacos & it was fantastic!! Also great on green salad!!

This is excellent. The addition of the rub, lime juice and cilantro really elevate it. I will definitely make it again. I can't wait until corn on the cob is in season to make it. When I made it now, I simply used defrosted frozen corn and blackened it in a cast iron skillet with some of the rub mixture. I would use a red pepper next time instead of yellow for the visual color contrast.
I love Brian's show and have been exceedingly happy with the recipes I've made.

Instead of grilling the fresh corn (out of season, I substituted 2 cans of drained corn and added the cumin and more chili powder to the vinegarette. I also used a red bell better instead of the yellow - more colorful - and soaked the red onion in water and red wine vinegar. This is a very tasty salad - Ole, Brian!

This was super easy to make and very very good. I did everything exactly as the recipe stated except I added a bit of red wine vinegar. This is excellent as a side dish and also as a dip with tortilla chips! I will definitely continue to make this!
