EXCELLENT JAM, USEFUL IN SO MANY WAYS. AND SO PANTRY FRIENDLY. DID SUBSTITUTE BACON FOR THE PANCETTA BECAUSE I HAD THAT ON HAND. ALSO LOVED THE WAY HE 'FORKED' THE ROLL OPEN FOR A RUSTIC LOOK. HAVE TO KEEP YOUR EYE ON HIM ALL THE TIME...HE'S FULL OF INTERESTING IDEAS AND TECHNIQUES. SO FUNNY, STILL LAUGHING ABOUT THE PAM ANDERSON JOKE!

NOTE TO 'ANNE' FROM TX - WHAT IS REALLY MISLEADING IS YOUR ONE STAR COMMENT COMPLAINING ABOUT PEOPLE WHO HAVE NOT TRIED THE RECIPE GIVING IT FIVE STARS........DUH! YOU DIDN'T TRY IT EITHER! THE OVERALL RATING IS AFFECTED MUCH MORE WITH YOUR ONE STAR THAN THE 'HAPPY FANS' FIVE STARS. THINK ABOUT IT.

Had an abundance of fresh tomatoes and no jalapenos - so I thought I'd give this a try. I replaced the oregano with cumin and used this over chicken and cheese enchiladas. I had a problem reducing the balsamic down - but that could be my "inexpensive" (never cheap balsamic. Have some leftover sauce - using it tonite over caprese crostini.

My husband and I changed the recipe to make it as two sandwiches instead of little sliders (just didn't cut up the chicken, cooked it longer, and served it on large kaiser rolls. They were awesome. The flavors on the sandwiches all worked so well together and the tomato jam is unbeliveable! Will definitelty make them again.

Loved this recipe. The Tomato Jam was amazing. I actually made the jam the night before I made the sandwiches and just warmed it the next night. I used chicken tenders to make pounding the chicken easier. My husband is already talking about how we could make something more along the lines of Chicken Parm but use the Tomato Jam instead of Marinara. That sounds good too, but I just want to make these sandwiches again...and again. Also, love Brian. He is so much fun to watch!

A friend brought these chicken sliders to an outdoor concert last Saturday, and I enjoyed them so much that I determined to find the recipe. I absolutely loved the Jam and plan to make a batch to try with other meats.

OMG...that is the best tomato jam we have ever had! I didn't do the chicken exactly as he did, I used chicken tenders with a larger french roll. But, that jam, I want more, that would be good on other meats and not necessarily in a sandwich. I so enjoy watching Brian, he's so funny and talented and who knew he could cook? He's not just another pretty face. I can't wait to try more of his recipes. Jojo
