I made a minor change in this recipe so I could bake it instead of frying- the second coating of flour I changed to panko crumbs so it'd still give the crunchy texture. Then I baked it at about 350 for 15-20 minutes which worked really well. I loved the dipping sauce too!

I made these for a neighborhood football party a couple of weeks ago and everyone is still talking about how good they were! Loved, loved, loved these derby bites. Thanks Brian for the wonderful ideas and a very entertaining show. You're the BEST!

I just love your show Brian. I can't wait to see more. You are so funny....I think your show is the best one ever. The recipes are simple and good. Love this spicy fried chicken bites recipe. I like spicy food...will add more cayenne next time.

I doubled the recipe because I had a 4 pound bag of store brand chicken tenders. I cut them in half and followed the recipe, except that I only added half the red pepper. I used my Pesto Fry Daddy and fried them for 4 minutes. Yummy and crunchy. We used our own dipping sauce, although when I am able to remake Brian's recipe for the dipping sauce- I will- in a heartbeat! What a wonderful cook and great chicken recipe. thank you, Brian!!

I loved it! The chicken was very tender and crispy, and not too spicy at all. My grandma thought it was too spicy, but everyone else thought it was great! Next time I'll perfect the double dipping, it was a little messy, Brian made it look much easier.

Bar none, these are the best chicken tenders I've ever made or ever had. It was definately the hot sauce in the buttermilk and the red pepper in the flour coating, plus the double battering. I look forward to making more of Brian Boitano's recipes!

I look forward to this show more than any other Food Network has done! Brian is so fun. The recipes are ALL outstanding. Have sent all of his recipes to my daughter in Canada, to use for her husbands 50th B'day. He definatly surpasses screaming Rachel and smiley Giada. Really can't stand either one and they are on all of the time.

My husband likes everything spicy. He'll put hot sauce on spaghetti, so I knew I had to try these for his sake. What a great dish! However, my husband only noticed the "heat" here and there, so I would suggest kicking it up a notch if you like things really spicy. I'm not into spicy, so for me they were just fine! I let the chicken marinate in the buttermilk/hot sauce mixture over night, so the chicken was very tender. Double dipping the chicken twice in the flour is time consuming, but worth the effort. We actually had this for dinner... we put the chicken bites over spinach and poured the dip on top... delish!
