I love this show. Foodnetwork, what a home run to have Brian Boitano as a member of your team. The show is funny and original and so much fun to watch. The recipe...delicious. The combination of red pepper flakes, garlic, butter and olive oil - amazing. I look forward to trying more of Brian's recipes.

I've made this salad twice since I watched the show over the weekend. It's super simple. I have to say, this is one of the few shows my family watches together. It's perfect!

My take on this recipe: I had plum tomatoes that I slided in half, drizzled with olive oil and sprinkled with shredded garlic, then roasted under the broiler. I made the croutons like Brian did. When the warm tomatoes cam out of the oven, I mixed them into the vinagarette which made a nice juice base for the bread. I added a thinly slided small red onion, a handfull of chopped fresh basil, a good bunch of chopped flat leaf parsley, and used feta cheese cubes instead.

Brians ideas inspired me to use what I had available and it turned out to be an unbelievably great salad.

I always use sherry vinegar for my dressings.
This salad was just wonderful with it.
I made the whole menu for some friends.
We just loved all of it.
It was easy, but really elegant.
    Thanks Brian.

I've made lots of panzanella salads and most are really labor intensive and take so long! This was so easy and tasty. Love Brian's show. He's adorable and so animated. It's fun to watch him make anything!!

It was so delicious and easy.

Some changes I made because of availability:

I didn't have fresh basil leaves but had some of the "tube" kind you find in produce. I added 2 squirts to the dressing itself.

I also didn't have red wine so I did one tablespoon of balsamic and 2 tablespoons of fresh squeezed lemon juice.

I couldn't find regular ciabatta and used sun dried tomatoes ciabatta. Yum!

Lastly no perlini mozzarella so I used cubed fresh mozzarella instead.

The result was fab and family ate it all up!

I could not find perlini mozzarella so I used regular fresh cubed mozzarella cheese and I changed the Kalamata Olives for regular black olives, the salad was fresh and delicious! I will definitely make it many many more times.

I happened to catch this episode while it was airing and had everything I needed to make it (except for the red wine vinegar, I used white wine vinegar -since I was trying to put a lunch together to take out on the boat - I thought I'd try it - turned out great. I didn't put it all together til we were ready to eat - afraid the croutons might get soggy - paired it with shrimp scampi (same basic flavors and small red baked potatoes. Packed everything warm in a lg insulated bag - it traveled fine. Made a note to remember this combo the next time we have company for lunch on the boat.
