Ingredients
  • 4 tablespoons butter, room temperature
  • 1 1/2 pounds fresh broccoli
  • 1 large onion, chopped
  • 1 carrot, chopped
  • Salt and freshly ground black pepper
  • 3 tablespoons all-purpose flour
  • 4 cups low-sodium chicken broth
  • 1/2 cup cream
  • Homemade Croutons, recipe follows
  • Homemade Croutons:
  • Day old French bread
  • Olive oil
  • Salt and freshly ground black pepper
  • 1/4 teaspoon red pepper flakes
Directions

Melt 4 tablespoons butter in heavy medium pot over medium-high heat. Add broccoli, onion, carrot, salt and pepper and saute until onion is translucent, about 6 minutes. Add the flour and cook for 1 minute, until the flour reaches a blonde color. Add stock and bring to boil.

Simmer uncovered until broccoli is tender, about 15 minutes. Pour in cream. With an immersion blender, puree the soup. Add salt and pepper, to taste, and then replace the lid back on the pot. Serve hot with Homemade Croutons.

Homemade Croutons:

Preheat oven to 400 degrees F.

Cut bread into cubes and place in a large bowl. Drizzle cubes with olive oil, salt, pepper and red pepper flakes. Mix well.

Spread seasoned bread onto a sheet pan and bake for about 15 minutes.

Yield: 4 to 6 servings

Waw. It is the best broccoli soup I ever tried! Here are my changes to make it lighter: 2 tbs butter and 2 tbs canola oil. Half a cup of whole milk instead of cream and half an onion as advised in previous reviews. By the way I put the flour in the end before blending the soup. It sound strange but i worked for me. It is a great base recipe but I always doctor it up with herbs, raw garlic added to the onions, white wine. The end result is sensational (if I do say so myself)! First broccoli soup I liked--rather than tolerated. After reading other reviews, I reduced onion by about 1/2, added a celery core with leaves, increased broccoli to 2lbs. Flour was not a problem--dumped it in and stirred it into the carrot/onion/celery mixture before broth. I subbed 1 cup Almond milk for the cream, but added about 1 cup of whole milk greek yogurt to finished soup. Red pepper flakes are a must. Loved this recipe! The only thing I changed was adding the broccoli along with the chicken stock. It was nice and tender after 15 min. of simmering. Very good. I did play with it, added a celery core with leaves at the beginning, skipped the flour, and put it 2 cups baby spinach leaves about 2 min before cook time done. They gave it back the lovely green that the boil had removed. Only let it boil for 12 min, any more is over doing it. Changed the cream to 1% buttermilk, and added a dash of hot pepper sauce. I tried the recipe with only one change. I happened to have fresh thyme, so I put a bundle in with the simmering soup. I removed it before blending, and it had the perfect amount of flavor. This soup is very good, however; a few tips. Don't throw the broccoli in with the flour, only onions and carrots, then add the broth and then the broccoli. I didn't love this recipe, but it was better than the one from Vitamix. The biggest issue I had with this one was the flour. By sprinkling it over the veggies, it clumped to them, and when I added the liquid, the flour didn't completely dissolve. Rather, some of the flour clung to the stems of the broccoli and formed little white chunks - very small - too small to be pureed with immersion blender. I would have liked to leave chunks of veggies in the soup, but instead I had to puree it as much as possible to destroy the majority of the white chunks. I even tried to strain the whole thing, but the soup was too thick to fit through, so I was left picking out the white chunks - I believe they were flour-covered broccoli stems. I used almond milk instead of cream. I addded about 1/3 cup of fat free greek yogurt at the end, which was great. Also added red pepper flakes. I'll make again and skip the flour. Excellent soup!! I made the croutons with a slice of sweeter bread (Kings Hawaiian) quickly crisped in a skillet. Which added an interesting flavor as well as a bit of garlic in the soup. YUMMY! I'm gluten free so i used chick pea flour instead, which apparently doesn't have the thickening power of regular, but it didn't hurt anything. i cooked it a little differently...i did the cream sauce separately at first because i wanted to see how it worked with the chick pea flour. Delicious and easy. I had two huge heads of broccoli I wanted to use so decided to look for a soup recipe. I found this one and had all the ingredients on hand. I decided to puree everything before adding the cream. I ended up omitting it completely. This soup is thick and creamy without it and really does not need any cream. DELISH!!! I really didn't know what to expect from broccoli soup, having never eaten it before. But I had a not so nice head of broccoli in the fridge, that my boyfriend picked out at the market, that I didn't relish the thought of eating. So I searched for other ways to cook it,outside the norm of sautéing, steaming and roasting. Yummy!!! This must be one of the tastiest ways to eat broccoli. I added 1 chopped garlic clove and thyme leaves to the onions and replaced the cream with evaporated milk. I even forgot to add the flour before I poured the stock in, but added it after in a slurry with a little butter and it still was a great recipe. My broccoli was a large organic bunch. Cut off the bottom 1/2 inch of the stalks, chopped the stalks and that was the main part of the broccoli that I used, only a few tops. All who tasted it raved. My husband brought home a HUGE bunch of broccoli and I didn't want it to spoil before I had a chance to use it all. So, found this recipe for broccoli soup. What a GREAT way to use the stems of the broccoli, which I hate to admit, usually end up in the trash. Just peeled, chopped and used them in addition to some of the florets. Delicious! I needed a recipe that was simple so I could test out a new immersion blender. The first time I followed the recipe almost exactly (coconut flour instead of regular and extra frozen broccoli and it was amazing. Today I made a batch with garlic, shallot, and mascarpone cheese instead of cream, topped with turkey bacon bits and croutons made from bits of whole wheat roll toasted in the same pan as the bacon. Had to join food network just to review this recipe and hopefully,many more to come.so i altered this recipe.added broccoli,3 baby carrots,few chunks of sweet potatoes, red bell pepper,sweet peas and onions. Sauteed it with some olive oil and 2 teaspoons of butter for about 5minutes and added some chicken stock and let it simmer. Forgot to add flour but didn't have any so I used about a teaspoon of cornstarch flour and added some garlic powder and black pepper. Blended with my magic bullet and topped up with quinoa. OMG! This is the BEST I've ever had. I used a lot of broccoli - combination of 1 1/2 stalks of fresh, a whole bag of frozen and a whole bundle of broccolini that was in the fridge. Only thing I did differently was add a large dollop of sour cream in the final whipping stage. My husband says this is going to be his favoorit of ALL soups. This is the broccoli soup recipe I've been looking for. Skipped the carrot and used frozen broccoli florets. We prefer a creamier soup and the frozen cooks up better. Do not add salt until the end. I only had regular chicken broth, not low salt today and it was just a little salty because I added some salt in the begining too. I have made this soup a couple of times now and it's definitely a 'no fail' recipe. It's unbelievably fast if you follow the cooking directions - I have let it simmer away for about 30-45 more just to get the most flavor. We like a bit of texture so I leave a bit in the pot when I remove the rest to puree and use a masher to just squash the remaining broccoli up a bit. That way when you add the rest of the soup back in it gives it more a bit more texture to the soup. ***Also wanted to add that this soup freezes very well!! I made this recipe exactly as posted. It was good, but not the best i've had. Something seemed to be missing. It wasn't bad however, but will look for another broccoli soup recipe. Excellent brocolli soup. I made it for the first time today and it's already almost all gone. I puree'd 2/3rds in the food processor and the remaining third only got about 3 hits on the pulse button.
