I have made this 2 or 3 times and it is great. Last time I didn't have any bread and just added oatmeal like my Mom did and it was equally good. No other meatloaf recipe will do now. Thank you so much/

I've been making this exact meatloaf for years. I now make it in a glass ring dish in the micro-wave- half cooked w/o topping and spread sauce on top and cook it the rest of the way. since it's only my husband and I, I use one pound of beef.

I will admit I hardly ever follow recipes exactly, but I wanted to make sure my ratios were correct. I followed this meatloaf recipe closely but added bacon on top : and it turned out great! I followed the glaze recipe exactly and it was also delicious.

I used two pounds of lean ground beef (the store where I get it sells really lean beef - better than ground sirloin but has a small amount of fat in it. In order to keep the loaf from sitting in grease, I took a wire cooling rack that fit inside my 9 x 13 cake pan and set it in there and then laid a piece of foil on top of it to sit the meat loaf on. This allowed any grease to drain into the bottom of the pan and I had very little that ran into the pan at all. But it worked wonderfully and I'm no gourmet cook at all - try simple recipes that I can enhance some. The topping is what makes this meat loaf and you must have enough to eat some with every bite of the meat!

I'm not a big meatloaf person but i found this tasty. Thank goodness i added some more spices such as garlic and adobo or it might be bland. Next time I'll double the glaze.
