You can create up to five timers

Ingredients

  • 4 ripe peaches, diced (about 2 pounds)
  • 4 teaspoons light brown sugar (packed)
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup crumbled Sandies pecan shortbreads (about 10 cookies), plus additional for garnish
  • Fat-Free whipped topping (recommended: Reddi Whip)

Directions

In a medium bowl toss the peaches with brown sugar and cinnamon.

Place a layer of the peaches in the bottom of a parfait glass. Sprinkle the peaches with a large pinch of cookie crumbs and top with the whipped cream. Repeat with two more layers of each ingredient and garnish with an additional sprinkle of the cookie crumbs. Repeat with the remaining parfait glasses and serve immediately or chill up to 4 hours before serving.

    What a delicious, yet refreshing dessert! My mother-in-law is a very healthy eater so I just layered the peaches mixture with greek yogurt for her (peaches, yogurt, peaches, just the 3 layers. Also, I can't tell if the recipe says to do two or three layers but my parfait dishes are about 3 inches across and 2 layers (peaches, cookie, and whipped topping as one layer was plenty. Perfect amount for 4 people, it would be a great desert for the fall, but really great for any time!

    My family really enjoyed this dessert. Very tasty. I will make it for dessert again and again. I have used peaches from my peach trees and everyone loved it. Thank You.
