    I added a cup of coarse chopped walnuts, substituted pumpkin pie spice for the cinnamon, added another 1/4 teaspoon of cinnamon and my family is devouring it!!!

    I made a different recipe for zucchini bread that I found on this site (Paula Deen's and I thought I'd try this one to see if I liked it better. Compared to the other recipe, this recipe is almost inedible! Practically tasteless and what taste there is like dirt. Make the other recipe!!

    My entire family and I love this bread. I went for broke and made a double batch on my first try...totally great!!! One thing I did differently is squeeze out the extra liquid from the zuke; the one i got from the garden was huge and watery. Its hard to believe that anyone has anything negative to say about this recipe. If its done right, it comes out right!!! Enjoy folks!

    I've tried quite a few recipes and decided I love this one because you really get the zucchini with a tiny hint of the cinnamon, although I made a few changes:

    I substituted 3/4 cup apple sauce for the vegetable oil
    cut the granulated sugar down to 3 tblsp
    added 1 1/2 cups chopped walnuts and 1 cup semi-sweet chocolate chips.

    I also made mine into muffins for easier grab and go readiness which cut the time down quite a but, probably by about half, but to be honest I just checked it every ten minutes or so until they looked good.

    this is a wonderful recipe,the flavor and texture was great. I used applesauce in place of oil and added flaxseed,my husband loved it!!!! I have passed this recipe on to my friends,and they loved it!!!

    This is the best zucchini bread recipe I've found - and I've tried a ton thanks to all the squash in the garden. Unlike the other loaves, this is not cloyingly sweet, just moist and light. Next time I would add 1/2 cup of chopped walnuts.

    I made these into muffins and added chocolate chips to some (those were the best. It cut the cooking time in half. They kept very well in the fridge and were perfect for breakfast.

    I tried this and it is excellent, very easy to make, the oatmeal gave it a very good texture and flavor. I even toasted it-yummy! You won't be sorry to try this. I think this will one of my favorites along with the other three zucchini bread recipes I have.
