I liked the recipe, even my kids enjoyed them. I would agree that pushing the time out to 40 minutes would be a good idea.

Keep in mind, as with all recipes, we have to adjust the ingredients for our own tastes. Also, keep in mind cooking times will vary with different ovens and with the size of the brussel sprouts.

I usually read reviews before making something and I saw that there was a mistake made by a viewer. I just watched the show and the third thing the chef puts in the pan was sage, so it was not missed. I made this but I used bacon grease which is more flavorful to me than olive oil along with a little sugar to cut the bitterness. If you want the garlic flavor, you will have to mince them to release the flavor. I did squeeze some lemon instead of just putting the slices in without squeezing them. Overall, with my changes, I think it was okay, but that's probably because I am not into brussel sprouts. I make them for family members.

I used less of everything (butter, bacon, sage, bay, and no lemon, and they were delicious. I did cook them longer... about 40 minutes at 375. I will definitely be making them again! They were sweet, not bitter at all like brussels can be.

I have to say I agree with some of the other reviews - I was a bit disappointed. I jotted down the ingredients during the show (DDD and then tried to replicate it exactly like he made it. Guy made it seem like they were mouthwatering. The cooking time was more like 45 min. than the 30 they talked about on the show.
And I agree with the other reviewer...cut the garlic in half. I used chicken broth instead of chicken stock. Maybe that would have made a difference.

. . . and not the recipe listed. Although they may use sage in the actual recipe they didn't use it on the show (or it was edited out, so I didn't use sage. On the show they use olive oil, bay leaves, sliced lemon, whole garlic cloves, salt and pepper and whole brussels sprout, tossed all those items in a bowl, then dumped on a piece of parchment paper that had a piece of foil under it so that when you seal it the parchment paper is inside the foil paper. He said he would cook it using the "smell test" when he smelled it he would take it out. Guy then said, "so you would say about 30 minutes?". He said yeah. Once he took it out the oven he said he would let it cool down until someone ordered at which time he would dump an orders-worth in a small frying pan, with about a tablespoon of butter and maybe 1/4-1/3 cup of HOT chicken stock (not broth - he didn't melt the butter first and he had it on high heat. He then added some crumbled cooked bacon, salt and pepper and cooked until the bubbles on the edges started to caramelize.

I pretty much cooked as he did on the show, including the "smell test", which was about 45 minutes, but I also cut both the brussels sprout and the garlic cloves in half. I also removed the bay leaves and lemon before adding to frying pan. I was able to taste both the lemon and garlic, some of the brussels sprout were a little bitter, but overall, we enjoyed them. I will definitely make it again (next time with fresher brussels sprouts, these had been in the 'frig for a little over a week :-(

I tried this recipe according to how it was cooked on the show and was a little disappointed. As one other person stated, the brussell sprouts were still a bit hard after the amount of cooking time. I also couldn't even taste the flavor of the lemon or garlic. If I try this again, I might try halving the brussell sprouts first and crushing the garlic and squeezing the lemon juice.

I tried this recipe last night and was disappointed. We do love brussel sprouts. I usually microwave them, halved, in a little water for 15 min., chill them, then toss them in a vinegarette and grated parmesan cheese, and serve cold or on salads with blue cheese dressing. What didn't work about this recipe for me was that the sprouts went into the oven whole. At 35 minute they were still very hard. I ended up cooking them another 20 minutes or so in the pan on the stove with the butter and stock. The lemon and bay leaves were a bit overpowering flavor-wise for us. This dampened our expectations of tasting any bacon flavor. I think I'll just stick to the stove or microwave when cooking sprouts, and will continue to cut them in half for quicker doneness.
