This was absolutely yummy. Two things: "shrimp stock" takes about an hour to make and it's super important to make it yourself. I would've done that ahead of time. Also, I didn't read carefully where it said to "stir continuously for 45 minutes." So although it was more time consuming than I anticipated it was well worth it. I'm eating some leftovers right now----at 10:30am! I also added 1/2 teaspoon of cayenne pepper. My hubby thought it needed a little more "kick" but I thought it was perfection.

I wanted to do something nice for my boyfriends parents while we are staying with them. They love my cooking, but i didn't have my usual recipe for gumbo with me. When I saw Paula make this on her show, I decided to give it a try. Not only did it come out excellent, but the guys were actually fighting over it! My boyfriends mother happens to not like shrimp so I added extra sausage, but she liked it so much she ate the shrimp anyway. It was so easy to make, but tasted like I slaved over a hot stove all day. Thanks Paula, you really saved the day with this one!

Love this gumbo!!, had a couple of family that can not eat shrimp, so I added more sausage. Taste great and they love it over rice.

I've tried several recipes and this, by far, is the best. I've had gumbo from many places and made this last night. I wouldn't change anything about the recipe. I didn't have fresh okra, so I used the sliced frozen kind from my local grocery store - couldn't tell the difference. The only thing we did was have cayenne pepper at the table for those who wanted more kick - perfect. My husband is eating the small amount of leftovers as I'm typing this - he doesnt't eat leftovers!! (Like Paula suggested on the show, make sure you add the onions, celery, and peppers when the roux looks like a new penny. Otherwise, the gumbo will taste burnt.
