    I completely agree with the others review, there is WAY too much butter and sugar in the crust. I also added an extra 1/8 cup of lime juice to the custard because I like it tart. I'm going to try this recipe again, with some major modifications.

    These are very good! I have Paula's cook book with this recipe and it differs a little from the online recipe. I only used 1 stick of butter (they came out perfect and baked them for the 12 minutes it states online. I also used 1/2 cup key lime juice in my second batch because the first ones were not quit tart enough for my liking. I used chocolate gram crackers and used 1/4 cup of sugar for the crusts instead of the 3/4 c. Make sure you press the crust again when you take them out of the oven to get the most available filling space.

    Sorry...not making these again. I should have read the reviews first...lesson learned. There was absolutely too much butter. After 8 minutes it didn't appear that the crusts were fully cooked (because of all the butter so I let them go a little longer. Then trying to get them out of the pan after they cooled was just torture. I used butter spray like she did on the program. Oddly enough I had just watched the program before making them. Usually that helps. Also, a lot of the crusts were not fully formed when they cooled. They crumbled apart.

    Thank all of you for giving tips on how to make this recipe. I'm looking forward to trying it now. Can anyone enlighten me on how to do the crust? Recipe says to press it in but it seems to me on her program it was formed and had sides. Am I mistaken? How did you do it?

    Overall a good recipe, I agree that the butter called for in the recipe is way too much, I cut mine down to 1 stick and it was plenty. Also I used only 1/4 c of sugar in the crust as the chocolate wafers (used chocolate grahams which was the only thing available were already sweet! Am baking them as I write for my granddaughter's 1st birthday and hope people will like them.

    BEWARE! This was by far, the greasiest chocolate cookie crust I've ever made. Really, one and a half sticks of butter??? IF I ever try these again, I would definitely start with 1/2 stick. The grease just soaked thru the paper towels and waxed paper they were cooling on.

    As for the filling, I used key limes and the taste of the filling was okay but I'm not sure it was worth trying to squeeze 1/4 cup of juice out of those tiny little limes.

    Sorry Paula, not a keeper for me!

    I also could not find chocolate wafers so I used chocolate animal crackers and they worked out great. They turned out very good but when (and I will make them again I would have to agree with the others about the amount of butter and crumbs. Taste would get 5 stars but accuracy of ingredient amounts brings down rating.

    Absolutely delicious! I hesitated after reading the reviews; but having purchased all of the ingredients, decided to give them a try anyway. I'm so glad I did. They turned out perfectly (I followed the recipe exactly. I'm planning on serving them with Easter brunch. They're lovely.

    I saw these on tv and decided to make them. My high hopes for these tiny pies instantly turned to disappointment when butter began to rise to the top of the mini muffin pan. Once I poured the excess butter out and made the filling, they turned out ok. I will not be making these again.

    Made these for a family gathering this weekend, and they were a big hit.DELICOUS! I followed the recipe exactly and will make a few adjustments next time. I used the whole box of chocolate wafers and had left over cookie crumbs. I used 3 mini muffin pans and got 36 instead of 30. I used a small scoop which is exactly 1 T for the crumbs and the filling, A bit too much crust and not quite enough filling - next time I'll adjust a bit. Next time i will make 1 1/2 of the filling (or double the crust and triple the filling if I am cooking for a larger party, add a bit more lime juice, and use a little less butter and sugar in the crust. Also will top with cream just before serving. I did it about 2 hours before, and even though they were in the fridge, they didn't look quite as impressive.

    They really did come together quickly, look fabulous and were greatly enjoyed by all. I will be making them again!! Thanks Paula and Bubba!!!
