This recipe is SO easy and SO delicious!! It had everyone begging for more at my Christmas lunch. Note: I added 1 Tbsp. of freshly grated ginger to give it a little kick. Cathy Lowe rocks! PS--try her pumpkin bread and fish market apple pie recipes...they're now my holiday staples.

this was so simple, and very good. it's one of the best soups i've had. everyone loved, even my picky eaters. it also freezes well. it's also great for entertaining and with french bread.
