Excellent! My only gripe is that the amount of water is way too high. Someone else recommended filling the pot until the squash is just covered. This works perfectly, and usually ends up being around 3 cups.

Great flavor....but way too thin, I used a whole 2lbs of cubed squash. Anyone else have this problem? Maybe less stock next time.

We loved loved LOVED this soup! Huge hit in my family. Even my extremely picky father enjoyed it- and his idea of veggies are french fries.
We also made changes the second time we made it. We added Yukon gold potatoes and ground sausage. SO delicious!

My husband and I disagree on Butternut Squash soup. I love it with pepper and spice and he loves it sweet. In an effort to compromise, I made some slight variations to this recipe. I used more onion than called for, and 2 cups less chicken stock. I added one cup of organic unsweetened apple sauce, and 1/3 cup half and half right before serving. It had a sweetness wasn't overpowering or overly apple and really brought out the butternut squash flavor which I personally love. Served with honey wheat bread... perfect for a winter day!

Wonderful, healthy soup! Easy and fast to make - especially if you buy the squash pre-cut. I didn't add nutmeg and everyone loved it- from the 21 month old to the grandpa!

Soooo very bland! There are a lot better butternut squash soup recipes out there. I just knew the simplicity of this was too good to be true. If you don't do a lot of cooking, I'm sure this is a good recipe. For experienced cooks this just doesn't cut it in complexity of flavor, etc. Very nutritious so if you're a family of soup lovers without a lot of experience with squash soups, try this! It's easy & just a big bowlful of health.

Didn't last a DAY! After reading the reviews I added flour after I sauteed the onions and I covered it with just enough chicken stock, and at the end I added 1/3 cup of half n half. It had a complex depth of flavor I did not expect. I have had butternut squash soup that tasted like baby food. This was FAR FROM IT!!! The nutmeg on top is the perfect addition! I have a 10 and 11 year old that just loved it and my husband wants to take it to work with him. WONDERFUL!
