Directions
Beat 1 cup vegetable oil and 3/4 cup granulated sugar until fluffy; beat in 1 teaspoon vanilla and 2 eggs. Whisk 2 1/2 cups flour, 3/4 teaspoon baking soda and 1 teaspoon salt, then stir into the oil mixture. Add 2 cups butterscotch chips and chill 30 minutes. Drop by tablespoonfuls and bake 14 to 16 minutes at 350 degrees.

These cookies are tasty, but unremarkable. If you've had a butterscotch blondie in the past, this won't be of much surprise. The oil and sugar do not combine like butter and sugar do, when beating, so don't expect that creaminess in the batter at that point. Just put all the ingredients in, as the recipe suggests and make sure to bake them enough. Mine took 12 minutes. They didn't look "done" but were, so don't wait for browning. They are certainly sweet - no getting around that with butterscotch chips. So, if you are hoping for a decent butterscotch blondie cookie, you'll find it here.
