Ingredients
  • 4 (6-inch) tortillas
  • 12 ounces grilled chicken breast, cubed (about 2 large breasts)
  • 2 cups cooked black beans
  • 4 cups shredded lettuce (mixture of romaine and green leaf)
  • 4 tablespoons pumpkin seeds
  • 4 tablespoons crumbled feta cheese
  • 4 tablespoons roasted red peppers
  • Caesar Dressing, recipe follows
Directions

Warm tortillas over a gas flame, in a low temperature oven, or in the microwave. In the middle of each tortilla, place 3 ounces grilled chicken, 1/2 cup black beans, 1 cup lettuce, 1 tablespoon each pumpkin seeds, feta, and red peppers. Top with Caesar dressing and roll up. Serve immediately.

Caesar Dressing:

1/3 cup non-fat plain yogurt

2 tablespoons lemon juice

1 tablespoon vegetable oil

2 teaspoons Worcestershire sauce

2 teaspoons red wine vinegar

1 teaspoon Dijon mustard

1/4 teaspoon black pepper

1/4 teaspoon salt

1/2 teaspoon minced garlic

Add all ingredients to a blender. Blend until smooth. Refrigerate until ready to use.

    OMG!!! Amazing!!! I sauteed fresh red pepper.. and doubled everything.. This was by far THE best Caesar chicken wrap Ive ever eaten!!!
    I love this wrap! Simple and easy!
    What a great way to get extra fiber. My family isn't crazy about beans, but this wrap was so delicious, no one noticed. The dressing is very flavourful and low fat. Would certainly recommend trying.
    I'm just learning how to cook and this thus far, has been the easiest recipe I have tried. Cooked for my friends and they all loved it!
    I made this last night for dinner and it was really good. I added a little honey to the dressing because the lemon and garlic were a little strong. Also, instead of pumpkin seeds I used sunflower seeds. Yummy!
    This is my new favorite wrap! It is delicious, flavorful, and very filling, If you"re a light eater you might want to split it with someone.
