This is a fantastic dish. It's perfect -- simply perfect! Love the sun-dried tomatoes and that great smoky flavor. I actually got this recipe from "Guy Fieri Food: Cookin' It, Livin' It, Lovin' It" -- a great book, by the way. Like food blogger Julie Powell of "Julie and Julia" fame, I have a feeling I'm going to work my way through every recipe in Guy's book!

This dish was amazing. The only thing I may do differently is cut out some of the salt. Other then that wonderful.

One of the house favorites now. Everyone loved it! The sun-dried tomatoes really gave this dish some great flavoring. Instead of buying Paul Prudhomme's blackening rub I used Guy's own recipe in his amended version of this recipe listed on here as "Cajun Chicken Alfredo 2".

Very flavorful, but I'm unsure of how long to let the cream sauce reduce so I think I ended up with a little too much sauce. I think next time I'll just use 1/2 cup of cream per serving. But I loved it and it paired very nicely with the Pinot Grigio I bought randomly to use in the sauce. I'll definitely be making this for the next week or so.
