I made this dish to the letter except I used whole grain rice. The olives were over powering. I am not a fan of Olives but wanted to make the dish the first time as per the directions. The achote seeds stayed whole and crushed in my mouth, that was not fun. And my food was not very yellow as in the picture. I would make it again but omit the olives and maybe try Saffron as another reviewer said.

If you are intimidated by all the ingredients... don't be. I use saffron instead of the achiote seeds. I like the flavor and it gives it the right yellow color. Saffron is exspensive but the rest of the ingredients aren't so it works fine. By using Saffron you can cook in just one pot. I did have to add a little more broth than called for but other than that it was perfect. I have served it several times and someone always wants the recipe.

Wow!!!! This was my very first attempt at Arroz Con Pollo since i'm not latin.
I had no idea what its supposed to look liek or taste like but it got rave reviews!!!! I made it over a week ago for the first time and was asked to make it again this weekend :
I didn't realize what a hugh quantity it turns over though....
Very very easy to make and sure is a crown and tummies pleaser.
You'll love it!!!!

This dish takes me back to my childhood. The smell and taste remind me of visiting my grandmother.

This is one of the best versions of the recipe I have tried and now it is a monthly standard. The only problem is the ingredients. Some are listed as 1 can or 1 jar. This seems a little strange but common sense will do the trick.

I have never had arroz con pollo, but my husband loves it. He said it was just as good if not better than his favorite mexican restaurants.
I did have to add more liquid but maybe my vegetables were more in volume than what the orginal recipe calls for.
I will def make again. It was very easy, it was time consuming but well worth it.
