    I have made this several times. I always use my own sauce though (canned.
    Also, I salt and then rinse the eggplant for 30-45 minutes before cooking as well.

    The only eggplant I've ever had was as a child and my mother fried it. Hated it! But...I thought I'd give this a try when my grandson made it in advanced cooking in high school. We all loved it. Easy to make and delicious!

    My husband loves meat and hates eggplant. When I told him we were having Eggplant Parmesan for dinner he was not excited. To his amasement he loved it! He was ask several times are you sure there is no meat in this?? I have several plants in my garden and have frozen some eggplants to try this over the cold winter months in WI.

    I made this recipe last night and was not impressed at all. My kids wouldn't even finish theirs. It was dry and just did not have a good flavor. Will never make this one again.

    So easy and so yummy!! In fact, it's so good, I find myself making this once a week! I've upped the olive oil a bit just to make sure each slice is covered...drizzling just wasn't enough for me!

    I made this and it was very good and easy. The sauce is excellent. I used white wine and what I did not use I just drank while I was cooking.

    this recipe was great!! i made a few changes- I put the eggplant on a rack in the oven so it took 15 min. total to cook it, and i just used canned marinara. i would make it again for sure!

    unfortunatly i invited guests over to eat this meal. I should of known better when i saw that the only sauce was some tomato paste dilute with...uh wine. the taste was SO strong from the paste, we got out a jar of sauce and drowned the eggplant in it so we could at least eat eat.
