This recipe was loved by all when I used it for a dinner party. I did first place the sliced eggplant on a cookie sheet then cover each slice with sea salt and let it sit for a hour. I then rinsed, drained and patted it dry. This takes all the bitterness out of eggplant.

I skipped the sauce to use my own, but the baked eggplant was superb! I have been searching for a good recipe that does not involve frying the eggplant in oil. Definitely try this recipe.
