Ingredients

  • 2 cups grated yellow squash (from 2 medium squash)
  • 1/2 cup grated onion
  • 1/4 cup egg substitute, divided
  • 1/2 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • 2 cups grated zucchini (from 2 medium zucchini)
  • Olive oil spray

Directions

In a large bowl, combine by hand the squash, half of the onion, 1/8 cup egg substitute, 1/4 teaspoon salt, and 1/4 teaspoon pepper. In another large bowl, combine by hand the zucchini, half of the onion, 1/8 cup egg substitute, 1/4 teaspoon salt, and 1/4 teaspoon pepper.

Heat a large non-stick griddle over high heat; it will be hot enough when a drop of water sizzles when dropped on the surface. Squeeze out the excess liquid from both the squash and zucchini mixtures. Working in batches so as not to overcrowd the griddle, carefully drop 1 heaping tablespoon of both batters onto the hot griddle and flatten with a spatula to form pancake shape. Cook for a couple minutes on each side or until golden brown. Repeat until no batter remains. Keep warm in a low oven (250 degrees F) until all latkes are made, if desired.

    good if you tweak the recipe a bit

    the first time I made these they were awful; no flavor whatsoever. But when I made them a second time, I added spices and... topped them with salsa. hardly traditional, but still good. (probably better to stick with potatoes and just use less oil.)Read more

    Hmmm.....not latkes, but interesting with a few tweaks

    As a Latke Queen (I make literally hundreds of them every Hanukkah), I was looking for something lighter and less... overwhelming than the traditional potato latkes (pronunciation, by the way is lat-kehs not lat-keys) both for myself and the people I cook for. These were interesting but needed a few tweaks to really resemble a traditional latke. The squash tends to be very watery and needs to drain and be squeezed of all moisture. Kicked up the seasonings a little and added a couple of tablespoons of matza meal to help hold things together. Used egg whites instead of egg substitute. Then made a version with 1 cup of grated potato and they were finally approximating latkes without adding too many calories.Read more

    This is a a very good recipe IF You follow the instructions exactly. You add some salt and pepper at the end.
