Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 cup light butter
  • 1/2 cup mashed banana
  • 1 cup reduced-fat peanut butter
  • 1/2 cup egg substitute
  • 1 cup brown sugar
  • 1 cup sugar substitute (recommended: Splenda)

Directions

Preheat the oven to 350 degrees F. Line 2 sheet pans with a silicone baking mat or parchment paper and set aside. Alternatively, you can do this in 2 batches.

Sift flour, baking soda, and baking powder together and set aside. In the bowl of an electric mixer, blend butter, banana, and peanut butter together. Add egg substitute, brown sugar, and sugar substitute and beat until incorporated. Gradually add the sifted flour mixture to the mixer and continue to mix on low speed until incorporated.

Drop batter, in 1 tablespoon-size balls, onto the prepared sheet pan, about 2 inches apart. Flatten cookies a little with the back of a fork. Bake for 10 minutes or until golden brown and crispy. Let cool on a metal rack.

    I was looking for a recipe to use up a banana, not a "healthy" cookie recipe, so that may be part of the problem. I happened... to have light butter and splenda, so I made it as directed. I tasted one and the rest went in the trash. I have yet to like a baked item made with Splenda, but I do use it to sweeten other things. I've been able to transition to many reduced fat, lower calorie alternatives, but this one didn't work for me.Read more

    I have made these a few times now, differently each time. The first time I put mini chocolate chips on top of a batch and... left a batch plain. They turned out small, soft and almost cakey and delicious! The most recent time I made these I added the chocolate chips into the dough and they turned out looking more like regular chocolate chip cookies, but still equally delicious!!     Definately not a traditional pb flavor- but if you like the flavor of banana's you should like this! I replaced the egg... substitute with two eggs, and had to add a bit more flour.
