Potato Salad

Ingredients

  • 4 medium-sized red potatoes
  • 4 medium-sized white potatoes
  • 1 lemon, zested and juiced
  • 1 tablespoon Dijon mustard
  • Salt and pepper
  • 1/3 cup olive oil
  • 1 red onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 1/4 cup finely chopped parsley leaves
  • 2 scallions, thinly sliced

Directions

Place potatoes in a large pot and cover with water. Bring to a boil and cook for about 20 minutes; the potatoes are done when a knife is easily inserted into the potato. Drain and cool potatoes in the refrigerator for approximately 20 minutes

In a large bowl, combine the lemon zest, lemon juice, and mustard. Season, to taste, with salt and pepper. Slowly whisk in the olive oil. Add red onion, red pepper, parsley, and scallions and stir to combine and coat with the dressing. Season, to taste, with salt and pepper.

Remove potatoes from refrigerator cut into eighths or bite-size pieces. Add potatoes to bowl and toss to combine. Adjust seasonings, if necessary.

    I love different kinds of potatoe salads, but this was very different. The lemon was to strong. I added a teaspoon of sugar,... and a packet of Goya Sazon seasoning. I would have preferred honey but felt the sugar would sweeten things up, and it did. Adding the honey along with the mustard would help. Also used 1/2 of a red onion and I felt that wa s to much, I think a 1/4 of a red onion, and 1/4 cup of celery instead of the scallions. Also the lemon zest is to much. The concept of the recipe is good.Read more

    Well, it's different, i'll give it that. I was skeptical at first. I mean, who ever heard of potato salad with no mustard,... mayonnaise, or eggs? I decided to give the recipe a try. I made it up, i did not know what size lemon to use, because the lemons at the grocery store in my village are just a little smaller than golf balls. So i used one and one half lemon. I used 3 white and 3 4 red potatoes. I made it up, then put it in the refrigerator overnite. I did not even give it a " test" taste. I went to my father's place the next day with the potato salad. My father and i are very picky. Well, we both enjoyed it very much. The after taste was cool and refreshing, and it had a great taste to it. I will definetly make it again !!! It taste even better first thing in the morning when you wake up !!!!Read more

    The flavors are wonderful and this was a cinch to prepare. I halved the recipe for just my husband and myself and it turned... out perfectly. It even seems to make a lot more servings than the recipe suggests - I may have been using larger potatoes, but this was still a really generous yield. Thanks Mr. Cruz!Read more
