Ingredients

  • Canola oil spray
  • 1 medium red onion, coarsely chopped
  • 3 to 4 canned chipotle chiles in adobo sauce, coarsely chopped
  • 2 turkey sausage links, sliced into 1/2-inch pieces
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 (14-ounce) can pinto beans, undrained
  • 1 (14-ounce) can black beans, undrained
  • 1 (14-ounce) can kidney beans, undrained
  • 1 (14-ounce) can Italian-style diced tomatoes, undrained
  • 1/4 cup coarsely chopped Mexican chocolate
  • 2 cups merlot
  • 1 cup fresh cilantro leaves, chopped
  • 1/2 cup shredded low-fat Cheddar

Directions

Spray a large saucepan or Dutch oven with a few sprays of the oil spray. Add onion and saute over medium-high heat until tender. Add chipotles, sausage, seasonings, beans, tomatoes, chocolate, and wine. Bring to a boil over high heat and then reduce the heat to a simmer. Cover and let simmer for 30 to 40 minutes. Stir in cilantro and cheese just until cheese is melted. Serve immediately.

I found this recipe easy and tasty. I have also prepared this vegetarian adding no meat or adding tofu 'beef' crumbles.

My husband and I were amazed at the depth of flavors. This was fantastic the 2nd day, and even a small amount put in freezer... worked well a week later. YUMMY, heavenly chili! Loved it topped with cilantro and a bit of cheese.Read more

I changed it some....but it is awesome

Rated: 5 stars out of 5
This is a great recipe, but to suit our tastes, I changed it some. I omit the peppers and cilantro, use half the wine, and... use lean ground turkey. It is great!! A tip, I freeze the wine in 1 cup portions to use for later.Read more
