Candied Orange Peel

Ingredients
  • 3/4 cup water
  • 1/2 cup granulated sugar
  • 1/2 navel orange, zest removed with a vegetable peeler and cut into 1/2 - inch long strips
  • 3 tablespoons superfine sugar
Directions
  • In a very small saucepan over moderate heat bring water with granulated sugar to a boil. Add zest and simmer, stirring occasionally, 10 minutes. Drain zest in a fine sieve a small bowl toss to coat with superfine sugar.
