You can create up to five timers

Ingredients

  • 3 pounds sweet potatoes
  • 6 tablespoons butter
  • 1 1/2 cups sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1/4 cup peach liqueur, like Schnapps
  • 1 teaspoon lemon zest
  • 1 teaspoon orange zest
  • 1 cup orange juice
  • 1 lemon, juiced
  • 1/2 orange, sliced

Directions

Peel and slice sweet potatoes. Put in a large pot of lightly salted water. Bring to a boil. Boil 5 minutes, drain and cool. Put sweet potatoes into a 2 quart casserole, dot with the butter. Mix sugar with next 8 ingredients and mix well. Sprinkle over sweet potatoes. Pour orange juice and lemon juice over sweet potatoes. Cover with the sliced oranges. Bake in a preheated 350-degree oven for 45 minutes to 1 hour.

    I was looking for a recipe for sweet potato casserole
    and I saw this one with the peach schnapps.
    I brought it to a girls nite and it was a HIt!

    Now its my favorite sweet potato recipe.
