I was looking for a recipe for sweet potato casserole
and I saw this one with the peach schnapps.
I brought it to a girls nite and it was a HIt!

Now its my favorite sweet potato recipe.

I hate to be negative & I know from reading the reviews that some people had wonderful results with this recipe. I absolutely did not. I followed the directions carefully and it turned out completely soupy and just awful. If you want to try this recipe I would just caution you to have a "plan B" in case it doesn't turn out correctly. On the bright side, the peach schnapps made a delightful after dinner drink.

The taste was great but for some reason it was kind of runny. I'm going to try i again and see where I went wrong.

The combination of flavors was unreal. It is totally unexpected! It's a refreshing twists on an old thanksgiving staple.

I made this recipe without the almond extract or peach schnapps (because I didn't have those and it was still the best candied sweet potato we have ever had. The flavors melded beautifully. My husband, who is very particular about his Thanksgiving favorites, said I should just use this recipe for sweet potato from now on... and I completely agree!
